Okay, Recipes.
Biscuits (Auntie Joan’s)
250g butter
1 ¾ C sugar
1 ts vanilla essence
2 eggs
3 C SR Flour, plus plain flour as required to make appropriate dough (more flour needed if using cookie cutters)
Usually I put teaspoons of mix on the tray. Can decorate with Smarties or press down with a sugary glass.
Cook at 180 degrees C. Takes 10-15 minutes.
Not Catherine’s Brownies
125g butter (*200g)
1 ¼ C brown sugar (*2 Cups)
(1 ts vanilla essence)
½ C cocoa
2 eggs
1 C plain flour
I melt the butter, sugar and cocoa in the microwave then add the eggs and flour.
Cook at 160 – 180 degrees C (depends what else is in the oven!).
It is nice if it’s not too cooked, half an hour is usually plenty of time. It tastes better sticky.
Dusted with icing sugar looks nicer.
*The real brownies (Catherine’s Brownies) have this much.
Church Rosemary’s Jam and Coconut Slice.
The base is 125g softened butter, ½ Cup sugar, 1 egg and 1 ½ Cups SR flour. Mix and press into a tray (Lamington tin size).
Spread with jam.
The topping is ½ Cup sugar, 1 cup of coconut and 1 egg. Mix and carefully “spread” over.
180 degrees C, about 30 minutes (until it looks cooked!)
Strawberry cake (Auntie Nell’s apple cake without the spices and the apple of course!)
For some reason there are reasonably priced strawberries in the supermarket lately.
125g butter
½ C sugar
1 egg
1 C SR flour
Cream the butter and sugar; add the egg and then the flour. Spread into a cake tin lined with baking paper(the mix is quite stiff and does not spread easily).
Cook at 180 degrees C, about half an hour, until cooked (not too brown and knife comes out clean)
Cool and spread with jam and top with strawberries.
And lastly someone asked about pizza. I just make the usual dough and make it well before I need it so it has a chance to prove. The children like very simple topping; generic cheese and tomato puree (spreads easily compared to paste, and there are no lumps).
